Don’t worry, we would never use Jimmy Dean sausages. We made this soup with yummy vegan Kielbasa, of course!

This hearty and satisfying stew was made from 16 types of dried beans (available at grocery stores as “16 Bean Soup Mix”), carrots, celery, onions, red wine, thyme, celery seed, Creole seasoning, garlic, leeks, green beans, beer, store-bought vegan kielbasa, and more! The recipe includes instructions for how to make this on the stove or in a slow cooker. We used our slow cooker and this turned out wonderfully. This is a great lunch recipe that goes really well with a vegan grilled cheese sandwich! The recipe is from Betty Goes Vegan by Annie & Dan Shannon, page 70.

Kielbasa Facts: Kielbasa is a type of Polish sausage that is also known as kołbasa, klobasa, kobasa, kolbasi, kovbasa, kobasi, and kubasa.

These savory little root vegetable latkes are from Annie & Dan Shannon’s Betty Goes Vegan, page 466. These were easy to prepare and ever so tasty. Made using beets, carrots, potatoes, and onions these are baked, not fried like latkes are typically prepared, which makes them that much healthier. We served them with Sour Dressing from Vegan Deli by Joanne Stepaniak, page 123, and a chopped chive garnish.

Latke Fact: The word “latke” itself is derived (via Yiddish) from the Russian/Ukrainian word латка meaning “patch.”

This phenomenal meal from Betty Goes Vegan by Annie & Dan Shannon (page 25) hit a grand slam in our home. Truth be told, we actually had this for dinner, not breakfast! Here’s what you’re looking at:

  • Newfangled Baked Beans (made from pale ale beer, cannellini beans, molasses, onions, and seasonings)
  • Fried Vegan Eggs (we were not successful in injecting the tofu slices with the cheezy sauce as written in this recipe, but dolloping it on top totally worked!)
  • Lightlife Gimme Lean vegan breakfast sausage
  • Roasted Breakfast Potatoes with onions, bell peppers, and herbs
  • Lightlife Vegan Bacun’
  • Toast and jam

Served with Worcestershire sauce, hot sauce, ketchup, and fresh orange juice.

Breakfast Fact: According to a Harvard University – Massachusetts General Hospital study of children in Philadelphia and Baltimore schools, students who usually ate breakfast had better math grades, higher standardized test scores, decreased absences and tardiness, reduced hyperactivity and improved social relations in comparison to children who seldom ate breakfast.

Having this for breakfast is a really nice way to start the day. Strawberry and Cream Quinoa Porridge is a wholesome, simple recipe from Betty Goes Vegan by Annie & Dan Shannon, page 47. We used omega-rich hemp milk instead of the almond or soy milk listed in the recipe, because that’s what we keep in our fridge. This recipe calls for brown sugar, but I don’t see why you couldn’t substitute maple or agave syrup instead if you wanted to.

Quinoa Fact: Most people who have heard of quinoa think it’s a grain, but technically quinoa is a seed, not a grain, grown high in the Andes Mountains of South America.

These sweet, flaky, buttery scones were perfect with tea and a good book. We had some raspberries that we needed to use so we decided to try this recipe from Betty Goes Vegan by Dan & Annie Shannon, page 319. Raspberries and chocolate are a classic combination, and I love how the berries made the scones pink.

Scone Fact: The first scones were baked in cast iron pans hung in the kitchen fires of rural England and Wales.
