Almond/raspberry is one of my favorite flavor combos, and this recipe from Vegan Diner by Julie Hasson (page 147) really delivers!

This is an easy to make almond/raspberry sheet cake recipe with creamy almond/vanilla icing. I also arranged fresh raspberries all over the top of the cake so it would have more fresh fruit on it and I would feel less guilty about eating so much tasty cake. This would be perfect for dessert, afternoon tea, or a birthday party. Next time I will double the icing recipe though, because I like a lot of icing on my cake, heh heh.

Cake Fact: The ‘cakewalk’ dance originated in African American communities in the Southern United States and was originally a competition in graceful walking, with cake awarded as a prize.

These scrumptious Banana Breakfast Bars from Julie Hasson’s Vegan Diner, page 128, were a nice change from regular banana bread. More like moist, chocolatey banana blondies, it was a real pleasure to eat these for breakfast. I topped them off with raw walnut pieces before putting them into the oven for some heart-healthy omega-3 fatty acids. Yum!

Banana Facts: A bunch of bananas is formerly called a hand, and a single banana is called  a finger.

Biscuits and Creamy Sage Gravy, served up Little House on the Prairie style in our dining room with some meat-free sausages, hot sauce, and fresh-squeezed orange juice.

From Vegan Diner, page 47. We substituted hemp milk for soy milk for a soy-free version.

These cutout biscuits were so light and flaky, and the creamy sage gravy was to die for! Easy to make and even easier to eat. Such a tasty, savory breakfast. 🙂

Picture this… layers of buttery toasted English muffins, braised spinach, grilled Canadian bacon (vegan style, mais oui!) golden heirloom tomatoes, and a tarragon-white wine hollandaise sauce to die for.
